Holiday Recipe Contest Winner!

scott-stephan-blog-iconWe have a winner for the first round of our Holiday Recipe Contest and it comes just in time for Thanksgiving. The winner of this round is Susie Anderson and Sara Steele Rogers’ Peanut Butter S’mores Bread Pudding. They also run a blog called We Are Not Martha and by the looks of it this is not their only delicious recipe!

If you didn’t win this round don’t despair! There’s another deadline on the 18th of December. Any recipes already entered are eligible for that deadline as well, so no need to re-send us anything.

Without further ado, the Peanut Butter S’mores Bread Pudding recipe!:

Peanut Butter S’mores Bread Pudding by Susie Anderson and Sara Steele Rogers
  • 10 slices of hearty bakery style sliced bread, slightly stale (we used a thick honey oat bread)
  • 9 standard size graham crackers
  • 2 cups mini marshmallows
  • 1 1/2 cups Dark Chocolate Dreams Peanut Butter & Co peanut butter
  • 1 cup heavy whipping cream
  • 1 1/2 cups milk
  • 2 eggs
  • 3 egg yolks
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
1) Preheat oven to 350 degrees

2) In 8×8 baking pan, layer bread of choice to cover bottom of pan (we used 5 slices).

3) Lay 3 whole graham crackers vertically and 1 1/2 horizontally to cover bread.

4) spread 1 cup of the mini marshmallows over the graham cracker layer.

5) In a small sauce pan, heat peanut butter over low heat to liquify.

6) In a separate mixing bowl, whisk cream, milk, eggs, egg yolks, sugar, and vanilla extract until combined.

7) Slowly add peanut butter to mixture, while whisking. Lumps may form.

8) Pour 1/2 of liquid mixture over bread, graham crackers, and marshmallows.

9) Repeat steps 2-4 creating another layer in pan.

10) Pour remainder of liquid mixture into pan.

11) Place remaining cup of marshmallows on top.

12) Place in oven and bake for 45 minutes.

13) ENJOY!!

    Hey, PB & CO!

    I just received your holiday E-blast letter and enjoyed every word!! I love your site-online, NY and everything else! I have tried all of your peanut butter flavors except Dark Chocolate dreams-its my #1 choice on the Christmas list this year! I am a HUGE Peanut butter fan. Some say it is ironic how much I love PB, as I am in recovery from an eating disorder. I rave much about your products on my own blog, so feel free to check it out. I’d love to do a guest post or recipe some times! I add your PB to my oatmeal every single morning. I also have a tee shirt that I wear around my college campus! :-)

    I think PB & Co. is such a great idea. It is so simple yet so creative. I tried the Heat is ON sandwich at the shop in NYC this past summer and fell in love.
